enable nginx http_stub_status_module to allow for server monitoring

The nginx built by Runcloud should include the nginx extension module http_stub_status_module, so that it would be possible to enable it, and actually be able to monitor the nginx on the server.

This is a vital part of server monitoring.

Yes please!!
I have to always do it manually and always forget where I did it.
I do run NIXSTATS and NGINX Amplify so there are things they need and read to access metrics.
